Chili is one of the best comfort foods out there. There are a million different kinds and methods in making it. Along with tons of ways to serve it. For example, I love loading the top of my with cheddar cheese and sour cream! Yum! This time, I made a fully vegan chili! It is delicious and is very healthy. This recipe is budget-friendly and as easy as pouring everything into a crockpot and dicing up a couple of ingredients. My chili contains a bunch of beans, tomatoes, peppers, and best of all, flavors!



 

Vegan Chili

This chili recipe is one of my favorites because of how easy it is, and how much of a crowd-pleaser it is. Picking out your ingredients is the best part because of how flexible they are. At the store, pick out any type of beans you want. I chose canned beans, specifically tri beans, and Dark Red Kidney beans. Tri beans are my go-to beans for any recipe I need beans for. It has the perfect blend of different kinds. Next, we get the canned tomatoes. You don't want to drain these because the tomatoes and juices are a big portion of the flavor and consistency. You can add any variety of peppers you want, from bell peppers to jalapenos. I don't like my chili too spicy, so I stick with my yellow peppers. The spices add all the main flavor to the chili, so make sure you follow the measurements for those. Adding the water can be tricky, but if you want a thicker chili, add only 1 cup, and if you want it more liquidy, then add closer to 2 cups of water. After your veggies are chopped, beans are drained, and everything is measured, you can dump it all in! Stir it up, and leave it alone for five hours to let it cook down and join together. You can stir it every once in a while if you feel the need to. Top with any cheese of your liking, I prefer cheddar cheese, and my mom uses vegan cheese.


 

There you have it folks, my Vegan Chili recipe. I created this vegan chili for my mom when she became a vegan. I have always been hesitant about chili because of the spice and the way it hurt my stomach. But when I started dabbling in cooking, I discovered that you can make any dish your own. Including making your own flavors, techniques, and ingredients. When I made my first chili, I was surprised at how truly easy it is to make. The spices I combined for the recipe work wonderfully together. My vegan chili allows you to enjoy a spicy soup, without feeling too terrible afterward. Overall, it is one of my favorite meals to make any time of the year, especially in the fall and winter on a colder night.
