My partner's favorite cake is Red Velvet. So, I knew for the holidays, I had to make some Red Velvet cookies. These taste just like Red Velvet cake and they are delicious. I love the white chocolate chips, but those are optional. You can add any kind of chocolate chips, or non at all! Either way, they are good! The only time-consuming part on letting the dough chill in the fridge for 4 hours. You can also let it sit in the fridge overnight if that makes it easier.
