Have a long day at work or school, but still want something nutritious for dinner? This simple and easy recipe is the perfect solution. Using two different vegetables and a homemade tomato sauce combination makes for a delicious and balanced dish. The best part about it is that it is super easy to make!


Emily's Veggies Recipe!


This easy meal is full of nutrients from the zucchini and squash. The tomatoes also add some too and make the vegetables taste like your eating a healthier version of spaghetti. I promise you, this isn't one of those meals that claim to be healthy but don't actually taste good. The flavors are delicious. This will not disappoint. You can add other vegetables like spinach or peppers. This meal is vegan without the cheese at the end, but I doubt anyone would even know! Vegan cheese is located at most grocery stores if that's your preference. I prefer the Italian blend shredded cheese from Kroger!






Emily's Tomato Sauce!

This tomato sauce is probably the easiest and fastest sauce you will ever make! These cupboard ingredients are small but mighty. All of them blended together smell like a dream. The sun-dried tomatoes are one of my favorite products to cook with. Some of the oil from the jar can be added as well. They provide a fresh yet smoky flavor to any dish. In my family, there can never be too much garlic! So add as much as you want. Use this sauce for any occasion and pair it with any ingredient for a fun and fresh dinner!










I make this meal for my mom every week. She is vegan and she does not have much cooking background, so I try very hard to make sure she has healthy meals. I always used to be a meat, cheese, and bread person, until I started learning more about different foods and flavors. Now I can make almost any type of breakfast, lunch, or dinner because I ventured out into this new world of foods. I am even making homemade recipes such as the ones above.
